Overview on Nutrition
Dr. Jamuna Prakash, is serving at present as Visiting Professor under International Union of Food Sciences and Technology, for developing countries and Department of Food Science and Biotechnology, Zhegiang Gongshang University, China. A former Professor of Food Science and Nutrition at University of Mysore with vast teaching and research experience, she is a Fellow of International Academy of Food Sciences and Technology, Canada and National Academy of Agricultural Sciences, India.
She has had an exemplary academic career with many awards and accolades to her credit. She is actively involved in research with >250 research and review papers, 14 books/book chapters, >400 presentations and successful completion of many research and educational projects with total citations of her publications exceeding 2800. She has guided many students for doctoral and post-doctoral research. Her research Interests are compositional analysis of foods, product formulation, sensory evaluation, nutrient digestibility and bioavailability, nutrition status of population, food behaviour, etc.
She is a member of many National and International committees, life member of many professional organizations and serves as Indian Ambassador for Global Harmonization initiative, Austria. She is the recipient of prestigious Dr. R. Devdas Memorial award for excellence in applied nutrition, Prof. M. V. Honour award for research achievements and Best teacher award.
Food Science – Compositional analysis of foods, product formulation, sensory evaluation, nutrient digestibility and bioavailability, functional properties of foods, nutritional quality of processed foods, antioxidant components and antioxidant activity of foods, bio-waste utilization.
Nutrition – Nutrition status of population, food behaviour, diet surveys, nutrition and cognition, nutrition education.
